Here’s how to make it. First, combine the goat’s cheese, chives, orange zest and creme fraiche in a bowl and divide the mixture into your tart shells. Then, mix up the beetroot with oil, vinegar and chives, before placing it on top of the cheese mixture. Sprinkle with fresh herbs and orange zest.

Main: Chilli Coconut Prawns

What’s an Aussie summer without some fresh prawns? In this dish from Australia’s Best Recipes, you’ll get elements of seafood, spice, cream and coconut — all in one colourful bowl. It’s a crowd-pleaser at any time of year but especially during the summer months.

To make it, you’ll first need to marinate the prawns in Thai sweet chilli sauce, garlic, soy sauce and a few other ingredients. Then stir fry the prawns until they’re cooked, before adding a coconut cream sauce and snow peas. Top if off with a bit of sambal oelek and lime juice before serving over rice.

Dessert: Gluten-free Strawberry Cheesecake Slice

Strawberries are a quintessential summer fruit and this delicious dessert from Taste.com.au is the perfect way to eat them. It brings together thinly sliced strawberries and crushed pistachios on top of a rich and creamy slice. And with no baking required,it’s an excellent choice for summer entertaining.

When you’re ready to make it, you’ll start by creating gelatine. From there, you’ll combine cream cheese, condensed milk, sugar and salt, before mixing it with the gelatine mixture and allowing it to chill for about six hours. In the meantime, you’ll make the crust by combining almond meal, whole almonds, butter and sugar. Whisk the cheesecake mixture, place it on top of the crust, and let it chill for 30 minutes. Finally, complete the slice with a combination of strawberries, lemon juice, and sugar and top with pistachios.
